Lunchbox Muesli Bars
This recipe is good if you like the idea of using “real” ingredients, like real butter and honey etc. Also good if you like the taste of honey joys….as they taste suspiciously like them!
1/3 cup brown sugar
1 cup oats
1/2 cup coconut
1/2 cup SR flour (wholemeal or plain would work fine, as would spelt or other flours)
1/2 cup dried fruit (cranberries, apricots, blueberries…whatever your child will eat, I suppose)
5 chopped dates
1/2 cup seeds (try a mix of chia, sesame, pumpkin, sunflower)
Add the melted ingredients to the mixed together ingredients, combine then bung into a tray (23x15cm or similar).
Bake for 20min at 180degrees. Cut once cooled. Keep refrigerated.
On non-school days, try this slice including nuts!
